Myicellar誠意邀請大家,一同體驗酸度清爽典雅的香檳汽酒與美味新鮮歐洲生蠔的完美配搭。 當日特別挑選了六款來自世界最著名的香檳之一Louis Roederer 家族的著名香檳供大家品嘗,當中包括Louis Roederer與法國設計師 Philippe Starck合作的限量版香檳Louis Roederer Brut Nature 2009。 來自Natural Holland的 Mr. Martin Rijk將會為大家講解正確的品蠔禮儀;而Louis Roederer的代表 Mr. Frederic Heidsieck 更特別從法國遠渡而來,分享配酒心得及釀酒工藝。 此等美事,香檳生蠔愛好者萬勿錯過!歡迎所有MyiCellar的朋友參加。 

Oysters and Champagne are a match made in heaven! 

MyiCellar  members are invited to experience the wonderfully crisp acidity of a chilled glass of fizz paired with the salty  flavours  of a fresh oyster from Europe. We will have six renowned Champagnes from the famous Champagne house Louis Roederer, including the world famous limited edition Louis Roederer Brut Nature 2009 in collaboration with French designer Philippe Starck. Martin Rijk from Natural Holland will expertly lead you through the correct oyster etiquette.  We also invited winery representative Mr. Frederic Heidsieck come from France to share his experience for the wine making and matching. This is the perfect event for Champagne and Oyster lovers! All members and friends are welcome.

International Export Director  

Born in the heart of Champagne, Reims, with a champagne passion as family heritage, Frederic has been in the champagne industry for more than thirty years. Having originally graduated in Economics, Management and Business Administration, he began his career in the Management of the hotel industry in 1982 (La Samanna – St. Martin) and  in 1984 he moved  into several positions in the Export Departments of different Champagne Houses prior to Louis Roederer.  

  At Champagne Louis Roederer, Frederic was appointed International Export Director in 1990. Since then, he has assumed full responsibility of the international sales and promotion of the company’s properties: Louis Roederer in Champagne, Château de Pez and Château Haut - Beauséjour in Bordeaux, Domaines Ott  and BY.OTT  wines  in the Cote de Provence and Bandol. He also works in close collaboration in various assignments, namely in his role as member of the Board of Directors of Louis Roederer distribution subsidiaries in UK, Switzerland… with Mr. Frederic Rouzaud, CEO and 7th generation of Champagne Louis Roederer family.

1. Fine the Claire

Origin: France

The Fine de Claire is a well-known French oyster who has spent his last 'affinage' (maturing process) in the claires on the French Atlantic coast. Because of the affinage in these claires, the oysters are stronger and slightly sweeter in taste. The Fine de Claire has a meat percentage between 6.5 and 10.5%.

2. Oisri special

Origin: Ireland

The Oisrí is characterized by its high meat content and the perfect balance between soft and sweet. These oysters owe this to the bays in which they are grown, where the water is rich in plankton and minerals, essential nutrients for the oyster. The constant current of the Atlantic Ocean around the island also helps to form every oyster in a perfect drop shape with a very strong shell and a smooth, pearly white glaze.

3. Oesterij Special

Origin: The Netherlands

These beautiful full oysters come from the best breeding areas with a lot of current and a high food supply. The Oosterschelde National Park is known for its pure clean water. The oysters are refined in our oyster basins with filtered Oosterschelde water.

The affinage in purified Oosterschelde water provides a nicely balanced, sweeter taste. Because it is a special, the oyster is nicely full. This provides a rich, creamy taste experience.

4. Oosterschelde Creuse

Origin: The Netherlands

The Oosterschelde Creuse is also called Zeeland Creuse. The unique taste of this refined oyster is lightly fruity with a fresh and salty accent. The robust sea flavor of the Oosterschelde provides the refined bite that sets this oyster apart. The Oosterschelde Creuse has a deep bowl and an oval, capricious shell.

5. Grevelingen Creuse

Origin: The Netherlands

The Grevelingen Creuse is also called Zeeland Creuse Special. The unique food richness of the Grevelingenmeer gives this oyster its special taste. The cocktail of algae aromas, the many hours of sunshine and the pure water make the unique taste of this full and creamy oyster a true taste sensation. The Grevelingen Creuse has a deep bowl and an oval, capricious shell.

6. Dutch Imperial oyster

Origin: The Netherlands

The cultivation of the Dutch Imperial Oysters requires a lot of attention and care from the breeder and the oyster is only suitable for consumption after 3 to 6 years. The Dutch Imperial brand is a selection of the best flat oysters from our breeding grounds in Dutch waters. The oyster is with its unique complex taste for the true oyster lover; creamy and powerful, with a long aftertaste.
