DESCRIPTION
Shojin ryori is the Japanese Buddhist vegetarian cuisine followed by monks in Japan. People say that the founder of Zen Buddhism, which was a Chinese monk, brought this type of cuisine to Japan.
In the typical shojin ryori meal, you will find soybean-based foods, like tofu, seasonal vegetables and wild mountain plants, which gives a great nutritional balance to the body, mind and soul.
When you cook shojin ryori, you need to follow the “Rule of 5”: Every meal should have five colors (green, yellow, red, black and white) and five flavors (sweet, sour, salty, bitter, and umami), which comes out naturally from the ingredients. This balance in color and flavor helps to bring the body and
the mind into a healthy balance.
Shojin ryori is a very light and simple way of cooking which uses a lot of fresh, local, and seasonal ingredients
