Dean Winter

Manager Director, Swire Hotels

Dean Winter is a hotelier and restaurateur, with over 30 years of experience in London, Hong Kong and Singapore. Previously the Group Director of Operations, Dean is now the Managing Director of Swire Hotels, expanding his scope of responsibilities to take on the day to day leadership of the Swire Hotels portfolio under the two brands, EAST and The House Collective. He joined Swire Hotels in October 2006, to manage operations and pre-opening preparations for The Opposite House in Beijing, The Upper House and EAST in Hong Kong, prior to opening The Upper House as General Manager in 2009. He has taken on various roles since then; including the oversight of opening The Temple House in Chengdu and The Middle House in Shanghai.

Prior to joining Swire Hotels, Dean developed his Management career over 14 years with Mandarin Oriental Hotel Group and also served as General Manager for Terrence Conran’s restaurant group in London.

Dorothy Oh

Managing Director, Fine+Rare, Asia

Dorothy Oh is responsible for the Asian business of one of the leading UK wine merchants with offices in Europe, Hong Kong and Singapore.

Dorothy has over 25 years of experience within the luxury segment. Prior to joining Fine+Rare, she was in the advertising and beauty industry before she embarked on her wines and spirits journey in the mid 1990s with Moet Hennessy Diageo (a LVMH joint venture) and Moet Hennessy Asia Pacific (LVMH) in leadership positions for both local and regional markets. Her experience living in Singapore, mainland China and Hong Kong has allowed her to witness the evolution of the wine industry within the Asian markets.

Hubert Li

Managing Director and Co-Founder, Hong Kong Wine Vault

Hubert Li is the managing director of Hong Kong Wine Vault, the largest self-serviced wine storage facility in Hong Kong, offering the combination of space, security, temperature and humidity control, and ease of access for private collectors. Wine Vault also operates an active online wine shop, offering fine wines at wholesale prices, as well as the opportunity for collectors to offload their excess wine. Over the years, Wine Vault has organised hundreds of fine wine events, bringing together the very best of the wine community.

Regional Content Director, Tatler Dining

Rachel Duffell is the regional content director for Tatler Dining. Duffel is a journalist and editor who has been covering people, travel, adventure, food, wine, design and entertainment for almost 15 years. When she’s not writing she can be found traversing the trails of Hong Kong and beyond in an attempt to run off the many indulgent meals and glasses of Northern Rhone syrah she seeks out.
