一項由Blue Bottle Coffee 創辦人James Freeman 及 全球咖啡體驗資深總監 Benjamin Brewer監修的全球巡迴頂級咖啡體驗企劃 「Blue Bottle Studio」,於今年10月再度登陸香港,提供的預約制頂級咖啡體驗。
這項90分鐘的咖啡體驗由Cascara(咖啡果皮)展開,以咖啡櫻桃果肉濃郁甘甜的果香、花香和泥土香揭開序章;及至今年以「咖啡的未來」為主題,並由兩種少見卻意義非凡的咖啡品種揭開序幕:Liberica(利比里卡) 與 Excelsa(埃克賽爾薩)。從James深受影響的「喫茶店」文化而來,希望客人能從中體會到咖啡的歷史和真正魅力;最後佐上由日本「Tangentes」新世代知名甜點師後藤裕一與仲村和浩特製的限定甜點,讓客人品嚐其與咖啡之間的和諧和對比。
靈感源自「喫茶店」文化
「Blue Bottle Studio」創意總監 James Freeman深受日本「喫茶店」文化的影響,對原材料真誠,對沖泡過程專注,對客人的服務賓至如歸,全部承繼在Blue Bottle Coffee品牌之上。由此,James終於突破多年對淺焙咖啡的難題,成功掌握到能展現喫茶店名品Neldrip Coffee(法蘭絨濾布手沖咖啡)深層香味的精巧沖泡技藝。這道極罕有的Neldrip Coffee將以「Black」(黑咖啡)及「Au lait」(牛奶咖啡)兩種形式呈獻給客人品嚐。
BLUE BOTTLE STUDIO – HONG KONG - 提供的預約制頂級咖啡體驗。這個體驗會為客人帶來六款咖啡與兩款甜點,由咖啡的整個生命旅程以主題,讓客人體會到咖啡的魅力和未來。
● Leaves, Flower, and Cherry — 開場三部曲,品嚐來自 馬拉維(Malawian)的咖啡葉與 馬來西亞 的 Liberica 咖啡花及果實,感受與Arabica不同的清新花果氣息。
● Soluble — 以 印度 Excelsa 製作的自家即溶咖啡,引證了在創新的同時亦可保留咖啡的原有風味。
● Long Cup Flight —三款珍稀單品咖啡,包括 越南 Liberica(帶烘焙麥茶香)、馬來西亞 Liberica(熱帶水果與花香)及 印度 Excelsa(番石榴與香蕉甜味),於客人面前即席沖煮。
● Short Cup & Au Lait —— 靈感源自日本「喫茶店」文化,以喫茶店名品Neldrip Coffee(法蘭絨濾布手沖咖啡)沖煮出濃郁風味,分別以「Black」(黑咖啡)及「Au lait」(牛奶咖啡)兩種形式呈獻給客人品嚐。
● Kohaku & Kashi — 由日本「Tangentes」新世代知名甜點師後藤裕一(Yuichi Goto)(亦是著名餐廳PATH及EQUAL的甜點師) 及 仲村和浩(Kazuhiro Nakamura) (亦是Think Tokyo創辦人)監修的特製甜點,包括 KOHAKU及溫暖的KASHI,與咖啡風味互相呼應。

2025年,我們以「咖啡的未來」為主題,並由兩種少見卻意義非凡的咖啡品種揭開序幕:Liberica(利比里卡) 與 Excelsa(埃克賽爾薩)。雖然 Arabica(阿拉比卡)長年主導精品咖啡的舞台,但我們相信咖啡的未來應該更廣闊、多元而且有更多的可能性。Liberica 代表著未來咖啡的發展方向,具有「明日咖啡」的精神。
- 適應未來氣候的咖啡 ——憑藉深厚的根系和天然的抗旱能力,Liberica 能在低海拔、氣候溫暖地區健康生長,比 Arabica 更能適應氣候變化及降雨不穩的環境。面對全球暖化,Liberica 為農民帶來穩定的未來,也為咖啡種植開啟全新方向。
- 罕見而驚喜的風味 —— 在精品咖啡世界中鮮少登場的 Liberica,經細緻處理後可展現如藍莓、波羅蜜及烘焙麥茶的香氣,並帶有圓潤的甜感,既可媲美 Arabica 的優雅,又增添了熱帶風情的深度與趣味。
與 Liberica 同屬近親的 Excelsa 則散發著熱帶水果的活潑香氣,包括番石榴、香蕉及香料的淡源香味。兩者結合,讓大家可以品嚐到更多元、帶有可持續性且充滿新故事的咖啡未來。

This reservation-only event offers a unique and unforgettable coffee experience that is unparalleled in the world. The course begins with an original drink made with cascara, the fruit part of the coffee cherry. A unique and special coffee encounter awaits you in the flight set consisting of three very rare single origin coffees carefully selected from all over the world. It is followed by a menu inspired by the coffee shop culture that James was heavily influenced by. We hope you will enjoy our menu that reinterprets the past and history of coffee and expresses the true appeal of coffee. Served with the coffee are sweets supervised by Yuichi Goto and Kazuhiro Nakamura of Tangentes. Please experience the harmony and contrast with the coffee.

Inspired by “kissaten” coffee shop culture
James was deeply impressed by the Japanese “kissaten” coffee shop culture, such as the sincere attitude toward ingredients, attentive hand drip coffee, and personalized hospitality to customers, which have been passed on to the Blue Bottle Coffee brand. With this course, James has succeeded in expressing the deep flavor of the Neldrip coffee served in kissaten coffee shops, which he has been looking for a way to do with a light roasted coffee for many years. The extremely rare Neldrip coffee is served in two styles, "black" and "au lait" with a dash of milk.
The 2025 Studio Coffee Course
The Studio Coffee Course (HK$780, inclusive of HK$200 spending credit) is a six-drink, two-sweets journey designed to engage all five senses and immerse guests in the life cycle of coffee, from leaf to cherry to seed. Highlights include:
● Leaves, Flower, and Cherry – A three-part opening sequence featuring Malawian coffee leaves and Malaysian Liberica flowers and cherries, revealing the refreshing, delicate flavors rarely experienced outside the farm.
● Soluble – A house-made instant coffee crafted from Indian Excelsa, demonstrating how innovation can honor coffee’s essence even in new formats.
● Long Cup Flight – Three extraordinary single-origin coffees, including Vietnamese Liberica with its barley tea-like aroma, Malaysian Liberica with tropical and floral notes, and Indian Excelsa with guava and banana sweetness. Brewed in front of guests, each cup reflects our pursuit of coffee’s essential truth.
● Short Cup & Au Lait – Inspired by the Japanese kissaten tradition, a dense, Nel-drip cup served black and with milk captures the depth and nostalgia of classic coffee culture with a modern touch.
● Kohaku & Kashi – Special sweets crafted by Yuichi Goto (also Owner, Chef Pâtissier of PATH restaurant and EQUAL pastry) and Kazuhiro Nakamura (also Owner of Think Tokyo) of Tangentes, including the Floating Cloud guimauve and a warm financier, harmonizing with the nuanced coffees.
Each moment of the course reflects Blue Bottle’s omotenashi—thoughtful hospitality and meticulous attention to detail—turning every sip into an unforgettable experience.
